Ingredients
Wasabi Dressing:
2 teaspoons Wasabi paste (in ethnic foods section or an Asian market)
1 tablespoon soy sauce
1/4 cup rice wine vinegar
1 tablespoon sesame oil
1-teaspoon ground white pepper
1/2 teaspoon grated lemon zest
Salad:
3 green onions, thinly sliced
1 sweet red bell pepper, seeded and diced
1 small cucumber, cut in half, seeded and sliced
2 cups brown rice, cooked
Serves: 8
Combine all dressing ingredients and mix well. Mix vegetables and rice and toss with Wasabi dressing; chill before serving.
