Pumpkin Soup

Ingredients

1 medium onion, minced
1 clove garlic, minced
1 teaspoon olive oil
3 cups chicken broth
3 cups pureed cooked pumpkin
1 teaspoon dried oregano
2 parsley leaves

Serves: 4

Heat olive oil in a saucepan over medium heat. Add the onion and garlic and cook until softened. Add the broth, pureed pumpkin and oregano and simmer for 30 minutes. Poor into bowels and serve. Tear parsley leaves and sprinkle on top.
