Ingredients
4 100gram red snapper fillets
1/2 medium onion, chopped
2 cloves garlic, minced
2 medium tomatoes, seeded and diced
1 teaspoon dried whole oregano
1/2 cup crumpled low-fat feta cheese
1/4 cup sliced black olives
1 tablespoon olive oil
Serves: 4
Apply thin layer of olive oil to frying pan or wok and heat over medium heat until hot. Add onion and garlic and sauté until tender. Add tomato and oregano and cook until water evaporates, stirring occasionally. Arrange snapper fillets in a baking dish coated with olive oil. Top with tomato mixture and bake uncovered at 350 degrees for 15 minutes or until fish flakes easily with a fork. Sprinkle with cheese and olives.
