Chicken Recipe

Ingredients

4 boneless skinless chicken breasts approximately 500grams
1/4 cup flour
2 tablespoons olive oil
3 pears, cored and cut into wedges (do not peel)
3 green onions, sliced
1 teaspoon minced garlic
1 cup apple juice
1/2 cup dried cranberries
1 teaspoon dried thyme

Serves: 4

Place the flour in a shallow dish and salt and pepper to taste. Lightly dredge chicken in the flour and set aside. Apply Olive oil to a non-stick frying pan and heat over medium-high heat until hot. Add the chicken breasts and cook about 2 minutes on each side or until browned. Reduce heat and continue cooking for 5-6 minutes per side or until no longer pink in the center. Remove chicken from pan and keep warm. Add 1 tablespoon olive oil to the non-stick pan and heat over medium heat. Add the pears, green onion and garlic and cook for about 2 minutes or until pears are slightly tender. Reduce the heat to medium and add the remaining ingredients and simmer uncovered until slightly thickened. Spoon pear mixture over chicken breasts and serve.
