1 (170 grams) jar marinated artichoke hearts, drained and chopped
1/2 medium red onion, chopped
1 stalk celery, chopped
4 (100 grams) salmon fillets without skin
Salt and pepper, to taste
1/4 cup reduced fat sour cream
1 tablespoon Dijon mustard
1 1/2 tablespoon dried parsley

Serves: 4

Preheat oven to 400 degrees. In bowl, combine artichoke hearts, red onion and celery. Place each salmon fillet on a sheet of aluminium foil. Sprinkle with salt and pepper. Combine sour cream and mustard and mix well. Divide sour cream mixture and spread on top of each fillet. Divide artichoke heart mixture and place on each fillet. Sprinkle each fillet with dried parsley. Fold edges of foil and seal. Place fish packets in oven and bake for 12-15 minutes, or until fish flakes easily with a fork.
