Ingredients
1 small. zucchini, sliced thinly
2 medium hot peppers, chopped
2 tablespoon oil
3 large. eggs, beaten
seasoning to taste
Serves: 2
Saute zucchini and hot pepper in olive oil with seasonings in small frying pan. Add beaten eggs, turn heat to medium high. Pull egg mixture to middle of pan with spatula so omelette heats evenly. When omelette looks slightly solid, flip upside down onto dish and slide back into pan to cook other side, can be flipped over again to brown each side. Delicious hot or cold!
