Asparagus and pine nuts with rosemary and lemon zest salad

This recipe is low in fat, high in fiber and complex carbohydrate. Nuts are great for your health and asparagus are high in fiber. It may be a bit unconventional but there is no reason why this dish can not be your breakfast, snack or as a side dish.
When you are losing weight the important issue is how much energy you are eating what components are part of your food.

Ingredients

1 lemon
2 tbs olive oil
2 tsp fresh rosemary
2 bunches asparagus
2 tbs pine nuts
Black pepper

How to prepare

DRESSING
To make the dressing, scrub the lemon to remove any waxy coating. Zest the skin of the lemon, avoiding any white pith. Juice half the remaining lemon. Combine the zest, lemon juice, olive oil and rosemary in a small bowl and set aside until required. ASPARAGUS
Trim the asparagus spears by snapping off the woody end. Steam the spears for 3 minutes and plunge them into cold water to stop further cooking. PINE NUTS
Dry roast the pine nuts in a small pan over medium heat until slightly golden.

PRESENTATION
Place the asparagus on serving plates. Drizzle over the dressing, top with pine nuts and season with black pepper.
